Overview:

This is a unique opportunity to lead the Food and Beverage effort at the historic Hotel Saranac, Curio Collection by Hilton. This boutique hospitality experience is nestled in the heart of the beautiful Adirondack region. The hotel includes 102 incredible guestrooms and suites supported by Campfire Restaurant, a grand ballroom with a full banquet and meetings operation, The Great Hall (lobby prohibition concept bar), Ampersand Day Spa and Academy & Main retail store.

Purpose of the Position:

To provide the leadership for the Food and Beverage team to establish and maintain the Hotel Saranac, Curio Collection by Hilton as the premier dining destination in the Adirondacks. To maximize the financial performance of the food & beverage outlets. To deliver a memorable guest service experience and drive the overall profitability and success of the Food and Beverage outlets to meet or exceed performance standards.

Position Summary:

The candidate will contribute to the profitability of the Company by effectively managing the Food and Beverage operation of the Hotel Saranac, Curio Collection by Hilton, a Full-Service Boutique Hotel; to assure optimum performance in the following Key Result Areas: Guest Service, First Class Condition, NOI, Asset Protection, Revenue Production and Employee Development. The candidate must possess strong communication skills, both verbal and written, exhibit an urgency to get things done and demonstrate outstanding leadership. The Director of Food and Beverage acts as a facilitator and catalyst taking a leadership role to coach, challenge, motivate and hold all Food and Beverage teams operating in the Hotel accountable for achieving our business objectives.

Responsibilities:

  • Be the driver with an entrepreneurial spirit that creates engaged Food and Beverage teams to exceed all operating targets.
  • Meet/Exceed Food and Beverage revenue.
  • Manage and control all operating expense line items and operating expenditures within budget.
  • Manage and lead Food and Beverage teams to achieve all profitability objectives of the division.
  • Monitor and report monthly on all Key Result Areas and provide the analysis to support the corrective actions to close operational gaps and meet operating objectives.
  • Participate and manage the development of the annual budget and business planning process for all Food and Beverage profit centers.
  • Lead and manage the performance of all Food and Beverage profit centers to exceed guest expectations for product and service.
  • Ensure that all guest experiences in the F&B department are positive; resulting in positive word of mouth, attainment of SALT score goals and positive Social Media reviews.
  • Guide and direct the development of property menus, complete with standardized recipes and cost analysis that reflect the brand concept and are current with industry trends for all Food and Beverage departments.
  • Ensure buying programs are in place that result in the quality that meets our product standards at the lowest cost per unit.
  • Assist, develop, implement, monitor and manage a comprehensive Food and Beverage marketing plan that results in maximizing the revenue opportunity for Food and Beverage.
  • Manage the employee development process for the Food and Beverage teams through continual coaching and development of direct reports to continuously improve performance and identify team members for recognition and advancement.
  • Handle all brand related HHonors programs and all packages per the Hilton brand standard.
  • To provide the leadership to the F&B team to maintain the highest level first class condition by reviewing guest feedback through property survey results and customer comment cards and developing actions to close operational gaps.
  • Serve as the Hotel Saranac representative on Food and Beverage matters with relevant organizations, trade associations and within the local community.
  • To lead team to pass all brand, local and state quality and health inspections. Requirements include four or more years of related experience in Food and Beverage, college degree of Associate Level or greater required.

Expertise/Knowledge Required:

Language Skills
Ability to read, analyze and interpret general business, technical procedures, company journals and government regulations. Ability to write reports and procedural manuals. Effectively deliver all required information to managers and coworkers

Windows XP or newer, Work, Excel and Outlook
Thorough working knowledge of POS systems

Physical Demands:

The employee will be required to stand, walk, sit, reach with hands and arms, kneel and crouch. The employee must occasionally lift or move 50 pounds.
